TO BEGIN: A RECIPE FOR DUMMIES

   Chopped liver with chopped eggs ( gehakta leiber mit tsibaless )

Chopped liver

For 6 people:
  • 400 g ( less than a pound ) of chicken liver
  • oil
  • a big onion or two small
  • salt and pepper
  1) chop the onions on a wooden board -fry them slightly brown -put them in a bowl
2) fry the chicken liver in the same frying pan -when they are cooked you chop them on the wooden board or for a very short time in a mixer
3) mix the fried onions and the chopped liver and a little bit of the oil in the bowl.
4) allow to cool at room temperature, but not in the fridge.

The secret of the chef: instead of the oil you can use goose or duck fat.

The chopped eggs
for six people:
  • 9 hard boiled eggs
  • oil
  • one big onion or two small
  • salt and pepper
  1) chop the onions on the wooden board very finely
2) add the eggs on the board and chop them too
3) put them in a bowl and mix them with a fork add salt and pepper and a little bit of oil. Display on a large plate the chopped eggs, the chopped liver and you can add chopped onions and salted cucumbers.
You eat the chopped liver and the chopped eggs at the same time - some people mix them , some people don't. It depends on:
  • your family traditions
  • your personal taste
  • the season
  • the mood of the day
  • the presence of your mother in law*

Chopped liver must be eaten the day you make it because it is
very fragile.
